General Tips
Being low in fat Crocodile meat loses moisture easily so..
Always marinate
Be careful not to overcook
We recommend sautéing in a very hot pan
Crocodile meat’s subtle flavour means that it should not be prepared using strong flavoured condiments
Always allow the meat to rest before slicing and serving
The following marinades will enhance the flavour of the meat without overpowering it….
Fruit chutney – mango is delicious
Citrus Or light tropical fruits
Salt and pepper with ginger and/or garlic
Fresh herbs such as basil or rosemary
Croc Kebabs
Ingredients
1.
Boneless tail crocodile – allow 100g per person
2.
¼ pawpaw
3.
60ml white wine
4.
Firm Bananas – allow 1 per person
5.
Olive Oil
6.
Soaked bamboo kebab sticks
Preparation
1.
Slice the tail fillet into 15mm medallions across the grain.
2.
Thread medallions onto the kebab sticks.
3.
Crush pawpaw into a flat casserole dish, add wine and a splash of olive oil
4.
Add the kebabs, make sure all the meat is covered by the marinade - refrigerate for about 30 minutes
5.
BBQ on an preheated open grill (not a hot plate) until just browned – DO NOT OVERCOOK

Set aside in a warm place to rest for a few minutes
8.
Cut unpeeled bananas lengthways and sprinkle the flesh with brown sugar, nutmeg or ginger
6.
BBQ flesh side down for a few minutes, do not turn
Serve the kebabs and banana on a large platter with a crisp salad and fresh bread rolls
